Dinner tonight: Pork medallions marinated in ginger, served with a stirfry of red onions, red cabbage, fennel and sliced apple in a red wine jus. Just delicious.

I cook a lot with fresh herbs such as basil, oregano, ginger, garlic, thyme, parsley, mint, marjoram, bay leaves, lemon grass (for Thai food), sorrel, rocket, fennel, dill, shallots, chives, rosemary and sage. All these grow in season in my herb garden except for ginger and garlic.
In seeds, powder or dried form, I use mustard seeds, turmeric, ground coriander, cumin, curry leaves, peppercorns, nutmeg, cinnamon, cardamom, carraway seeds, poppy, seeds, chili, paprika, fenugreek, dill seeds.
Fennel tastes like licorice and adds a lovely subtle flavour to a stir fry or side vegetable dish.
