Today's lunch, which was served cold since it is already uncomfortably humid here, was succulent roast chicken breast bathed in freshly made basil pesto, with rocket and sweet potato. There was also a salad made of avocado, tomato and snow peas with a lemon and pepper dressing. The tomatoes, basil and rocket all came from our garden.
Delicious!

What's rocket, does it make you blast off?
The other day I made ziti with eggplant red sauce. I liked it but it wasn't my favorite. I don't think I like vegan food. It's not flavorful enough. Tomorrow I'll make a squash medley thing.

Here's rocket: It has a beautiful fresh peppery taste. You might have liked the chicken in pesto, Arch. Pesto is made with basil, olive oil, parmesan cheese, garlic and pinenuts. It's extremely tasty.

I think I've eaten that before. Isn't it a weed? It looks like one.
Today I ate Peruvian beans for dinner. It was an accident. My mom was banging around in the kitchen in a happy mood when I came home from work and I thought she was making dinner. Turns out she was just cleaning the kitchen and rearranging the pantry and dishes and what not.
I'll make the squash medley tomorrow. I need a small head of cabbage anyway.

I have eaten dandylion leaves in a salad before. They are good, but they must be picked very young. I don't put them in salads I make though...
It is an often overlooked food source though. Here people try to kill dandylions with vengeance.

Today I cooked the squash thing. Yellow squash Zucchini Onion Eggplant Cabbage Cilantro Cumin Oregano Chicken Broth Throw it in a pot, bring to a boil then simmer for 30 minutes. Added Peruvian Beans after it was done because it needed something. Pretty tasty but for some reason it tasted like lemon. I added the Peruvian beans my mom made yesterday to it to cut the lemon flavor and it made it better and slightly sophisticated tasting. It's weird eating cabbage since I don't usually eat it outside of soup.

Hey my squash thing tastes better the next day! The lemon flavor is gone and now it's yummy. Here is the original recipe. I modified it by adding eggplant because I had half an eggplant that was going brown and I had to get rid of it. bit.ly/hceEszI added the oregano and cumin from a different yellow squash recipe and substituted fresh cilantro for lemon juice as the second recipe called for because I didn't have a lemon and the cilantro is wilting. I just eyeballed the spices since I couldn't find the recipe. I used to eat coleslaw before I went green and organic.
